Four Seasons Puerto Rico announces Perla supper club and Ocean Terrace

Perla opens on 19 October with caviar service and whole Dover sole, while Ocean Terrace follows in early November with Mediterranean-inspired menus beside the Atlantic.

Four Seasons Resort and Residences Puerto Rico has announced two new restaurants, with Perla due to open in October and Ocean Terrace following in November 2026.

The resort’s 30 September announcement sets out two different dining experiences under Executive Chef Victor Rosado. Perla, opening on 19 October, will be an intimate supper club built around premium seafood and cuts, with caviar service and tableside presentations. Ocean Terrace is scheduled for early November, bringing Mediterranean-inspired dining to a setting beside the pool and shoreline.

For travellers planning an autumn stay, the distinction is useful: Perla is designed for a leisurely evening meal with a sense of occasion, while Ocean Terrace will serve breakfast, lunch and dinner overlooking the Atlantic. The announcement also introduces Palm Court as the new name for the resort’s lobby bar, formerly El Bembé.

Perla: caviar service and supper-club dining

Perla takes its name from the Spanish word for pearl, with an intimate, elegantly designed dining room intended to suggest the discovery of a hidden treasure. Its supper-club format puts as much emphasis on the evening around the table as on the dishes arriving at it.

The restaurant will embrace sobremesa, the time spent lingering in conversation after a meal. That gives the concept a clear pace: an evening to settle into, with room for another drink and conversation rather than a quick dinner between other plans. For a celebratory meal during a beach holiday, it is the more occasion-focused of the two forthcoming venues.

Four Seasons says the service will include a Champagne, Martini and Caviar Cart, with caviar presented by the chef and additional participatory elements. Wines and spirits also feature prominently in the supper-club concept.

Among the announced selections are oysters served dressed and Hamachi paired with guanábana ponzu. Chilean Sea Bass and Prime New York Strip extend the menu into more substantial seafood and meat options, keeping the choice broad enough for diners with different preferences at the same table.

Larger-format selections include Tomahawk Steak and Whole Dover Sole. Those dishes give guests another way to shape the meal, with a substantial centrepiece rather than a sequence of individual plates. They also fit the restaurant’s emphasis on lingering over dinner, making Perla an appealing option for couples marking an occasion or friends gathering for a longer evening.

Ocean Terrace: Mediterranean dining beside the Atlantic

Ocean Terrace will sit alongside the resort’s pool and shoreline, with sweeping Atlantic views. Its setting makes it the natural choice for travellers who want their meals to remain connected to the beach, whether they are starting the morning or sitting down to dinner after a day by the water.

The restaurant is planned as an all-day venue, with breakfast, lunch and dinner on offer. Mediterranean coastal destinations provide the inspiration for a menu spanning handmade pizzas, pasta prepared in-house, fresh seafood, colourful salads and shareable starters.

Among the named dishes are Charred Octopus and Shrimp Insalata, putting seafood firmly within the coastal brief. Mussels al Limone continues that emphasis, while Margherita Pizza offers a familiar option within the Italian side of the menu. Italian Adobo Half Chicken is also among the announced signatures.

For a group holiday, that combination has an obvious appeal. A table can lean towards pizza and pasta or choose a seafood-led meal, with shareable starters allowing diners to begin together. The restaurant’s menus are intended to cover several meals across the day, rather than require guests to reserve it for a single special dinner.

Four Seasons also plans to hold brunch events regularly at Ocean Terrace, alongside seasonal programming. These will add further dining occasions to its regular all-day service. The opening is scheduled for early November 2026, with no specific day yet set out in the announcement.

Victor Rosado’s return to Bahía Beach

Rosado oversees the resort’s culinary programme and is directing both new concepts. In the announcement, he said: “Dining has the power to bring people together through shared experiences.” Perla’s lingering supper-club evenings and Ocean Terrace’s shareable dishes give that approach two different settings within the same resort.

His connection to the property extends beyond the restaurant openings. In a February profile published by Four Seasons, Rosado said: “Coming back to Puerto Rico, and specifically to Bahía Beach, means everything to me.”

That earlier introduction described his culinary approach as combining Puerto Rican heritage and local products with refined technique. It also previewed further food-and-beverage changes during 2026. The September announcement now gives those plans specific restaurant names and an autumn opening schedule.

The two menus have different international reference points, with Perla drawing on the supper-club tradition and Ocean Terrace looking to Mediterranean coastal cooking. Rosado’s role connects them within the wider resort programme, alongside venues that continue to focus on Puerto Rican and Latin-inspired flavours.

Palm Court, the renamed lobby bar

Palm Court is the new identity for the lobby bar previously known as El Bembé. Four Seasons says the venue will continue to celebrate Puerto Rican and Latin-inspired flavours, retaining the lively, sociable character associated with its former name.

Cocktails and refined small plates remain central to the offering. The resort describes Palm Court as its social hub, taking inspiration from the tradition of elegant lounges and welcoming guests throughout the day. Its role is broader than a place for a drink before dinner, with lighter food and a setting for gathering throughout the day.

For returning guests, the familiar venue therefore has a new name while keeping its flavour influences. For a first visit, it offers another dining mood alongside the forthcoming restaurants: a lobby lounge for cocktails and light bites, with Perla reserved for a fuller evening meal and Ocean Terrace covering all-day coastal dining.

The announcement presents Palm Court’s refreshed identity alongside the restaurant openings as part of the resort’s continuing culinary development.

Staying at the Bahía Beach resort

Four Seasons Resort and Residences Puerto Rico opened in November 2025 after refurbishment of the Bahía Beach property. It occupies a 483-acre reserve on Puerto Rico’s northeastern coast, along two miles of beach. The new restaurants are therefore arriving as the resort approaches its first anniversary under the Four Seasons name.

That coastal setting is most directly expressed in Ocean Terrace’s planned position beside the shoreline. Perla offers a separate evening experience within the same property, giving travellers the option to build a special dinner into a stay otherwise centred on the beach.

The resort’s accommodation collection includes Villa and Residence Rentals for families and groups of friends travelling together.
